At street Kyprou 149 in Igoumenitsa, Angelos Kyrannas realized his dream in 2019 and named it Red Honey Coffee. It is not just an other coffee shop, but the creator of unique flavors. Because coffee is not just a product to us, but a creative journey and inspirational, awakening your senses. We await you to join us on the journey of our dream and expand your taste’s horizon, with the special taste of our single variant specialty coffee! Now at our new address in Ag. How it started:

The word of coffee opened itself up to Mr. Angelos Kyrannas from his teens, when he smelled for the first time the intense flavor produced by freshly roasted coffee. Later on he traveled to Australia, one of the first countries where specialty coffee firstly flourished. There he trained and worked as a barista and learned to roast and process single variant coffee with the care and respect they deserve. Farther more he toke part in multiple Roastery Cupping events, and realized one more of his talents.

In 2019 he returned to Greece, armed with his skills and filled with passion for specialty coffee’s aroma and taste, ready to take on his greatest challenge yet. To serve elect single variant specialty coffee with high Cupping score, so that he can share what he experienced in Australia. He realized his dream in Igoumenitsa at Kyprou 149 and named it Red Honey Coffee.

What is it exactly that we do?

    We carefully select elect single variant coffee with high Cupping score.

    We store them in the required conditions, to protect its hard to find unique quality.
  3. Roasting
    We roast with the required attention to detail.
  4. Grinding
    We grind every single coffee variant in accordance to the its needs.
  5. Creating our own blend
    We create our own unique Red Honey Coffee blend.
  6. Packaging
    We package the coffee in special packaging for excellent preservation. Suitable for both household and commercial use.

SpecialtyCoffee

What is SpecialtyCoffee:

Specialty coffee is a term for the highest grade of coffee available, typically relating to the entire supply chain, using single origin or single estate coffee. The term was first used in 1974 by Erna Knutsen in an issue of Tea & Coffee Trade Journal. Knutsen used specialty coffee to describe beans of the best flavor which are produced in special micro-climates.
Specialty coffee is related to the farmers and the brewer what is known as the third wave of coffee, especially throughout Australia, New Zealand, North America. This refers to a modern demand for exceptional quality coffee, both farmed and brewed to a significantly higher than average standard.
Although there are many different Specialty coffee definitions, in accordance to international organizations, there are mainly three accepted requirements:

  1. The coffee must have been harvested by hand and with selective picking of ripe beans.
  2. The coffee must achieve a score of 80 or above on the 100-point Q scale.
  3. The maximum number of defective beans is 5, per 350 g.

What is single variety SpecialtyCoffee:

It is a variety of coffee, where its beans come only from a specific farm, so that its quality remains unchanged and the result always has the same taste and aroma.

The scoring system for specialtycoffee:

The prevailing and widely accepted definition for Specialty Coffee defines as a necessary condition its score of 80 points and above, on the 100-point Q scale.
Coffee ratings:

  1. From 90 to 100, it is rated as “Exceptional”.
  2. From 85 to 89, it is rated as “Excellent”.
  3. From 80 to 84, it is rated as “Very Good”.

The Specialty Coffee Association (SCA) is the union of the Specialty Coffee Association of American (SCAA) and Europe (SCAE). The SCA sets standards for specialty coffee at every stage of the coffee production, including allowable defects in green beans, water standards, and brew strength, while at the same time the SCA also sets clear standards on the coffee grading process. A minimum requirement for a Specialty Coffee is its number of defects. For a coffee to be considered Specialty, it must have from 0 to 5 defective beans, in every 350gr of ground beans.
